Cookies for breakfast

Being a working Wisconsin mom has its challenges. Our commutes typically suck and that’s even without snow. We rush to get our hellions to school and then haul ass cross country to work. Forgetting our lunches, dinner for crockpot and our minds. We are fueled by coffee, fried food, cheese and alcohol. And we do it all with a smile for every stranger.

Our day here typically starts between 5-6am and we need to be out the door and on the road by 630am. So it’s a race to the finish which is my work 1.5hrs away. Throw in a crabby 6yr old and complicate it with my new vegan mission to battle cancer and you have yourself a recipe for disaster. I’m always looking for ways to make things easier for us in the morning and found a great link for breakfast cookies! I whipped up a few batches of these over the weekend and froze the majority. They are healthy, vegan and quick! And while I no longer can enjoy my favorite fried foods and coffee in the morning this little cookie did the trick! E loves them too!
