
After a summer of fried foods, dairy, meat, lots of wine and beer and overall indulgent foodieness….I am back home where I belong. Veganism. I forgot how much I love creating new dishes out of plants. And I’m in heaven.

Every respectable cook has a sound track. Today I created my Fuck Cancer (sorry mama) soundtrack. Special thanks to Tina and Court for suggesting tunes that uplift and renew the desire to fight. There a few tear jerkers, one particularly that reminds me of my dear friend Lunchbox, but over all it makes me stand taller fists raised.

Good food makes me feel this way too. Tonight dinner was quinoa and black bean tacos. Again supported by loved ones, Beth and Tony’s burn your ass salsa, was the inspiration. The recipe was simple but like all veg dishes our sink is filled with dirty dishes. I made a cashew chipotle cheese sauce to pair with it. I love my cheese and sour cream. This was a great stand in for dairy.


So why vegan? Cancer and I have a lot in common. In another world we may have been party scene friends. We both love dairy, meat, fried foods and alcohol. All of these things make for a very acidic body. They make both cancer and a Wisconsin girl happy. However I’d rather have a lifetime of raw veggies, healthy choices and water if it means more time with my family.
Now there is no “proof” of any of this. My doctor (whom I love) poo poos the idea with each visit. However my markers were at their lowest when I was eating vegan/raw. It could be a fluke. Or it could be proof my body is better like this.
Now I’m not denying myself the occasional glass of wine. In fact once a month I have a free pass to share with my friend Pam. I know I will eat wisely though. My pass will come in a glass.
Cancer sucks. We all know that. But sometimes it’s the force behind taking better care of ourselves.
Recipes below. Recommend cooking the quinoa prior. Also make homemade salsa or have good friends that deliver it to you and add that to the quinoa dish. Lots of leftovers. Tomorrow it’s a Mexican bake with that!
